Chicken Curry with a Cashew-Coconut Sauce

The other day, Maus said she felt like some Indian food.  I got out Madhur Jaffrey’s Ultimate Curry Bible to see what I could find.  “I didn’t say I wanted curry.  I said Indian,” she retorted.  Not to be deterred, I flicked through my book and stopped at this recipe.  I have made curries with a cashew sauce before and they have been very nice.  I was keen.

Don’t tell Maus but this is a Sri Lankan recipe.  It is not very photogenic but, geez, it tasted good.  We had it for dinner two nights in a row and for lunch.  It got better each time. Continue reading

Spicy Chicken Salad

Summer is over in Perth but we are still having beautiful sunny days that lend themselves to outdooor lunches with friends and that is exactly what we did last week, with our wonderful friends, Deb and Gail. 

This is a simple, light salad that won’t weigh you down for the rest of the day.

The spice mixture for the chicken is Madhur Jaffrey’s Murgh ke mazedar tukray from her small cookbook, Quick & Easy Indian Cookery.  It is a gem of a book.  We have tried a lot of the recipes from it. Continue reading
