Orange and chocolate friands

p1000169copy

The egg white situation is out of control.  At last count, I had 34 in my freezer!  I don’t know how it happens. I don’t feel like I make that much custard, although, …

I did make a passionfruit tart the other day which contributed 12 egg whites to the collection.  EllaDee was visiting so I thought I would make something special.  One has to impress fellow bloggers, doesn’t one? Continue reading

Orange … or lemon muffins … or cake

IMG_5958copyMy mate, Steve, gave me this recipe.  It is called Easy Orange Cake and it’s not called that for nothing.  You won’t get an easier cake to make.

The recipe indicated the mixture could also be made into muffins.  And since there is only Maus and me, I decided to go with muffins so I could freeze some, if necessary, but they are disappearing quickly so I don’t think there will be any to freeze.

All you have to do for this recipe is put the ingredients into a food processor.  If you only have a small food processor, chop your orange in it and then put the orange and the rest of the ingredients in a bowl and mix by hand.  If you don’t have a food processor, don’t worry, just chop the orange as finely as you can. Spiced pumpkin and walnut muffins

These little guys look very rustic but geez they taste good.

A friend dropped in the other day.  Luckily, I had some muffins in the freezer so it was just a matter of zapping them for a few seconds to create an impromptu morning tea.  The situation reinforced to me how useful a few muffins the freezer can be.  When my friend left, I thought I would grab the opportunity to replenish our supply. I went to Ikea …

056copy

Those of you who know me will appreciate that is a big statement.  For those who don’t, I hate Ikea.  I have been a few times and I am yet to come out without throwing a tantrum.  I know it is a personality flaw that I have to bear.  I hate being told what to do and I particularly hate being herded, like cattle, through displays that they want me to pass just to get to one little item I may be interested in.  I have sworn, at least twice, that I will never go again… but still I venture. Choc Chip Oat Bran Muffins

004copy

I am very excited about this recipe.  It opens up so many possibilities.

I was flicking through Charmaine Solomon’s Family Album which, I must say, is not a particularly inspiring cookbook, and spotted these oat bran muffins.  As I mentioned in my ‘In My Kitchen’ post, I was attracted to the recipe because I have had some oat bran in the cool room for ages and had no idea why I bought it or what to do with it. Blueberry Friands

027copy

I have been thinking about friands for a while.  Not because I had a passion for them  but because I saw them as a saviour to my egg white problem.  Before I made these little beauties, I had 12 egg whites in my Perth freezer and eight egg whites in my Bridgetown freezer.  It was time to act. Beetroot and Chocolate Muffins

2013 08 24_0683 copy

I was flicking through Stephanie Alexander’s Kitchen Garden Companion in bed the other night (Yes, I do take cookbooks to bed with me) and this recipe caught my eye.  It was probably because the Chocolate Zucchini Loaf was still fresh in my mind – geez, that was good.  If carrot and zucchini are good in cakes, why not beetroot?
